Vegetable stew with cheesy dumplings

This warm and hearty vegetable soup is super nutritious, uses lots of whole foods and taste so delicious with the addition of cheesy fluffy dumplings. Its also a great one to get the kids involved! My 3 year old helped all the way through from chopping the veg, adding things to the pot, to making the dumplings – she was a pro at rubbing the flour and butter together for the dumplings- must be those soft hands!

It can also be a one pot wonder recipe as I used my ninja for the whole thing. You can also use a cooking pot that can be used in the oven and stove top. My kids and husband LOVE this dish so it’s now a weekly make during the colder parts of the year!
