Vegetarian Shepherd's Pie

- 500g vege mince (I use Quorn)
- 2 medium carrots
- 1 small courgette
- 1 cup peas
- 1 medium sweet potato
- 4 medium white potatoes
- 1 onion
- 1 tin chopped tomatoes
- 1 tbsp herb cream cheese or Boursin
- 3-4 curry leaves
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp red chilli powder
- 1/4 tsp garam masala powder
- 1/4 tsp coriance powder
- 6 garlic cloves
- Handful fresh coriander leaves
- Salt and pepper to taste
Instructions
PREP:
- Chop onion into fine cubes
- Peel and cut 2 carrots into small, thin chunks
- Grate the courgette
- Peel and cut potatoes (white and sweet) into large chunks (approx 4x4cm)
- Mince garlic cloves

1. Put potatoes on to boil - timer 20 minutes
2. Heat olive oil in a large pan, add curry leaves and chopped onion
3. Once onions are browned add all dry spices (1 tsp turmeric, 1 tsp paprika, 1/2 tsp red chilli powder , 1/4 tsp garam masala powder, 1/4 tsp coriander powder) and cook for 1 minute
4. Add minced garlic and cook for 1 minute
5. Add chopped tomatoes, carrots and grated courgette and simmer for 5 minutes
6. Add peas and mince and let simmer with lid on for 10-12 minutes - stir occasionally. Add 100-200 ml water if going dry. [I usually mash the mince to make the consistency a little smaller, this is preference and not necessary]. Take mince off the heat and stir in the fresh coriander.
7. Drain potatoes and mash together - add salt and pepper to taste and Boursin/cream cheese
8. Once cool spoon the mince into a baking dish (approx 25x30cm) and flatten
9. Add the mash potato in spoonfuls over the top and spread out - if you're extra like me use a fork to create grains into mash layer
10. Bake in oven at 180 degrees C for 10-15 minutes or until warmed through and crispy on top.
