Ingredients: For the stew:; Half a large onion (or 1 leek or 1 shallot); 1-2 cups of frozen mix veg (carrot, broccoli and cauliflower is my fave); 2 medium potatoes; 1 tin of mixed beans in water; 250g Mushrooms; 4 cloves garlic; 1 veg stock cube (I used knorr); 2 tbsps gravy granules; 1 tsp paprika; 1 tsp cayenne pepper; For the dumplings:; 125g self raising flour; 40g unsalted butter; 50g cheddar cheese; 1 tsp Thyme; Pinch of ground black pepper
