Ingredients: 500g vege mince (I use Quorn); 2 medium carrots; 1 small courgette; 1 cup peas; 1 medium sweet potato; 4 medium white potatoes; 1 onion; 1 tin chopped tomatoes; 1 tbsp herb cream cheese or Boursin; 3-4 curry leaves; 1 tsp turmeric; 1 tsp paprika; 1/2 tsp red chilli powder; 1/4 tsp garam masala powder; 1/4 tsp coriance powder; 6 garlic cloves; Handful fresh coriander leaves; Salt and pepper to taste
